At la Tortilleria our Pollos (Chickens) are special. To Start they are wholesome corn fed types, and very relaxed too - having never seen the inside of a freezer. Every morning we individually hand dress them with our secret marinade, then let them have an overnight "Siesta" to develop their unique flavour.
In the morning, the Cocinero (that's the cook!) makes sure the chickens have acquired the proper aroma and consistency from the marinade. And now, they are ready for roasting! Our rotisserie slowly broils the Pollos for a full hour and forty-five minutes, under the watchful eye of the Cocinero, until they are golden brown and crisp. Fresh from the rotisserie with a delightful aroma and unique flavour, they are ready to be served!
